Georgetown's Newest Hangout Is a Backyard on South Rock Street

Two years ago, a coffee trailer parked behind a yellow house at 1005 S. Rock St. On Sept. 5, 2026, Rose & Dagger Coffee Co. moved into the house itself. The backyard, which owners Madison and Jackson Vacek call The Grounds, now holds three local food trucks under a big pecan tree.

None of the four businesses came from out of town. One is a former coffee trailer and one is a catering truck that settled down. One is a bakery trailer from a few miles south in Round Rock, and one is a churro truck that started at the Christmas Stroll and spent most of a year at Tasty Trails. Together, the yard shows how Georgetown's small food operators are growing right now. They aren't opening big restaurants. They're moving into permanent spots one trailer at a time.

A coffee shop that started in its own backyard

Rose & Dagger's coffee trailer began serving at 1005 S. Rock St. on Sept. 3, 2024. In July 2026, Community Impact reported that the Vaceks planned to replace the trailer with a cafe at the same address. Jackson Vacek told the paper that the chance to take over the lease on the house came up early that summer, and they took it right away.

"Knowing we started in the backyard … to have the lease of the house, and our own coffee shop. It's been amazing." Jackson Vacek, to Community Impact

The renovation was bigger than they expected. Rose & Dagger is the first food business to operate in the house, so it took real work to turn it into a coffee shop. The idea itself goes back further. The Vaceks met as teenagers working at a coffee shop. In 2020, during quarantine, they wrote the whole menu and concept for Rose & Dagger in their apartment. Madison Vacek called the truck "a great stepping stone" and said they didn't originally plan to start on wheels.

Inside, the menu covers handcrafted lattes, teas and refreshers. The shop also sells art, flowers and candles made by local residents.

How the yard filled up

The trucks arrived before the cafe opened its doors. Here's the order things happened in 2026:

  1. July 1: Sanford Sourdough Bakery opens a Georgetown trailer at the address.
  2. Mid-July: Community Impact reports the Vaceks' plan for a brick-and-mortar cafe.
  3. Late July: El Hombre Tacos parks a permanent truck behind the house.
  4. Aug. 1: Churros ATX moves in from Tasty Trails.
  5. Sept. 5: Rose & Dagger opens inside the house.

So by the time the cafe opened, the yard already worked as a place to get lunch. Each tenant came from somewhere nearby.

Tenant Owner What to order Where it came from Listed hours

El Hombre Tacos Eric Thornell The Hombre Taco, with steak and melted cheese on flour; nachos; street tacos on corn One of Thornell's catering trucks Not published
Sanford Sourdough Bakery Not named in coverage San Francisco-style sourdough, sandwich and artisan loaves, lunch sandwiches and soup, starters, take-and-bake frozen goods Round Rock bakery Wednesday–Saturday, 10 a.m.–3 p.m.
Churros ATX Cesar Velasco Churros filled with dulce de leche, a churro loop with ice cream, chicken and beef empanadas Tasty Trails food truck park Tuesday–Saturday, 8 a.m.–3 p.m.

The hours come from each business's own website and aren't dated, so check them before you go. Churros ATX's site writes the address as "1005 SE Rock St." The city's visitor listing and local news coverage use 1005 South Rock Street.

The churro truck's route shows the pattern

Churros ATX makes the clearest case that this is about growth inside Georgetown, not new arrivals. It used to be called I <3 Churros. Its current trailer debuted at Georgetown's Christmas Stroll in December 2025. A month later it was parking full-time at Tasty Trails, 3309 W. Hwy. 29.

At Tasty Trails, its January schedule was evenings and weekends: Thursday and Friday from 4:30 to 8 p.m., and Saturday from 11 a.m. to 8 p.m. The hours it lists now at The Grounds run Tuesday through Saturday, 8 a.m. to 3 p.m. That moves the same churros from dinner and dessert to the morning coffee crowd, next to a cafe. Tasty Trails hasn't slowed down because of the move. Its events calendar lists live music on Oct. 2 and Oct. 3, 2026.

El Hombre Tacos made a similar move. Eric Thornell took one of his catering trucks, which go wherever the work is, and gave it a permanent spot. Sanford Sourdough did it a third way. An established Round Rock bakery added a trailer rather than signing a lease on a second storefront.

Three trucks took three different routes, and all three ended up in a yard that a fourth business had already proven worked.

More of this may be coming. In July 2026, an applicant asked for a special-use permit for a mobile food park off I-35 with six vendors, parking and restrooms. City Council had given preliminary approval with restrictions, and final approval was still pending as of Community Impact's July 30 report.

Meanwhile, on West University

Over the same summer, the 1300 block of W. University Ave. filled up with names many Georgetown residents already know from elsewhere. Velvet Taco opened July 29 at 1316 W. University Ave. Summer Moon Coffee followed Aug. 8 at 1312, run by owner Randy Findley, who has six other Austin-area locations. Paris Baguette opened Aug. 14 at 1314. Its local franchise owners are Georgetown residents Saige and David Lee. Mountain Mike's Pizza opened Sept. 2, and Georgetown's first Shake Shack opened Sept. 9 at 1316. More is on the way. Tomlinson's Feed is listed for a fall opening at 1316 W. University Ave., and Snarf's Sandwiches is under construction at 1310 through Dec. 13.

That corridor grew through franchise deals, often with local operators. S. Rock St. grew through one small business after another proving it could last. Georgetown now has both, a few minutes apart. On a single Saturday you can get a Shake Shack burger on University and a dulce de leche churro under a pecan tree near downtown.

An October plan built around the yard

The Grounds sits in the downtown Georgetown area, and October's downtown calendar is full. Wednesday through Saturday is the window when both Sanford's and Churros ATX's listed hours overlap. These dates fit that window or sit right next to it:

  • Saturday, Oct. 10: The Downtown Georgetown Association's 2nd Saturday Market Days, 9:30 a.m. to 4 p.m. Grab a sourdough loaf before the trailer closes at 3.
  • Friday, Oct. 16: The city's Autumn Art Stroll runs 4 to 8 p.m. It includes a Central Texas Philharmonic performance and a silent screening of Phantom of the Opera. The yard's listed food hours end in mid-afternoon, so stop by for lunch earlier in the day.
  • Saturday, Oct. 17: Pistons on the Square, 8 to 10 a.m. Churros ATX's listed hours start at 8.
  • Saturday, Oct. 24: Día de los Muertos, 10 a.m. to 4 p.m., at Light and Waterworks District Plaza, 809 Martin Luther King Jr. St. That evening, from 4:30 to 6:30 p.m., there's a floral-arrangement workshop at The Grounds that includes a free Rose & Dagger drink.
  • Sunday, Oct. 25: The free Downtown Candy Crawl, 1 to 4 p.m. Sanford's and Churros ATX's sites both list Sunday as closed, so plan the yard for the day before.

Further out, the 45th annual Christmas Stroll runs Dec. 4 through 6. This year's theme is "Hometown Christmas Stroll: A Season to Gather." That's the event where Churros ATX first rolled out its current trailer last December.

Places like The Grounds are part of what a home near downtown Georgetown is really worth, and I count them when I talk value with my neighbors. If you're curious what your Georgetown home could bring this fall, María Aguirre will put together a free home valuation, in English or Spanish, and I'm happy to meet you over a latte on S. Rock St. Hablemos.
